It’s February, which means we’re another month into 2021. As we kicked off the new year, we’ve enjoyed fun times with our residents and Vineyard Tribe. In our February 2021 Newsletter, we’re covering community updates, events, Vineyard Gives initiatives.

COVID-19 Vaccination Clinic 

We’re holding our second vaccination clinic on Wednesday, February 10. The clinic will take place on-site, and Walgreens representatives will administer the Moderna vaccine. All residents and staff are eligible to receive that vaccine. Even if individuals missed our first clinic in January, they can get their first immunization at that time.

Vineyard Gives: Bluffton Self Help’s Heart-Healthy Food Drive

As a part of our Vineyard Gives initiative, we’re supporting Bluffton Self Help’s Heart Health Food Drive. For the entire month of February, BSH is accepting donations aimed at heart-health.

Vineyard Recipe: Strawberry Shortcake 

Strawberry Shortcake

Looking for something sweet to share with a loved one this month? Whether for Valentine’s Day celebration or just a fun dessert, try our Chef’s unique take on the classic Strawberry Shortcake! 

Yields: 9 Servings                                                                                                        

Oven Temperature: 350˚F 

Bake time: 20 Minutes 


  • 2/3 cup white sugar 
  • 1/4 cup shortening 
  • 1 large egg, room temp 
  • 1 teaspoon vanilla extracts 
  • 1/4 teaspoon salt 
  • 1 ½ cups flour 
  • 2 teaspoon baking powder 
  • ½ cup whole milk 
  • 1 cup heavy whipping cream, whipped 
  • 1 ½ quarts fresh or frozen strawberries sliced 


  1. In a bowl, cream sugar and shortening. Add egg and vanilla; beat well. 
  2. Combine dry ingredients and add alternately with milk to the creamed mixture. 
  3. Spread in a greased 9-in. square baking pan. 
  4. Bake at 350˚f for 20-25 minutes. cool on wire rack 
  5. Cut into nine servings. Split each serving horizontally and fill with whipped cream and strawberries. 
  6. Replace top of cake, garnish with a dollop of whipped cream and more berries. Serve immediately.
